If you have a passion for basic cooking and a genuine desire to work in the catering industry, then this is the course for you. We’ll get you started in our professional training kitchens, helping you to develop a basic knowledge and basic practical skills you will need for a career in the sector. The course is broad and inclusive, designed to develop your understanding of all aspects of the culinary world and give you well-rounded experience in a fast paced, exciting industry.

  • Entry Criteria

    To enrol on a Level 1 Diploma, you should demonstrate a positive attitude towards learning and a commitment to developing the basic fundamental skills required for this chosen area of study. Typically, applicants will have:

    • Studied a GCSE programme or be able to demonstrate that you are working at Level 1. Applicants without formal qualifications will be invited to complete an initial assessment in English and maths to determine the most suitable level of study.
  • What will I study?

    In the kitchen you’ll be trained to use a number of basic techniques on a wide range of food including:


    • Baking, roasting and grilling – develop the skills and knowledge required to prepare and cook foods by the baking, roasting and grilling methods of cookery. Learn to follow dish specifications and begin to appreciate the aesthetic aspects of food preparation through the processes of finishing and presenting the products.


    • Frying - develop the skills and knowledge required to prepare and cook foods by the deep frying and shallow frying methods of cookery.


    • Boiling, poaching and steaming - develop the skills and knowledge required to prepare and cook foods using the boiling, poaching and steaming methods of cookery.

    You will also gain industry-required awards in:


    • Level 2 Food Safety, Health and Safety
    • VRQ Level 1 Food and Beverage Service

  • Future Prospects

    Upon successful completion of this course, potentially you will be able to progress onto a Level 2 Culinary Skills programme
