Successful completion of a relevant Level 1 programme.

What will I study?
You’ll be developing a whole range of skills across the kitchen including:
• Preparing and cooking stocks, soups, sauces, fish, shellfish, meat, fruit and vegetables
• Understand how to prepare and cook biscuit, cake and sponges such as, fruit cake, rock cakes, Victoria sandwich, shortbread and sponge biscuits
• Catering operations, costs and menu planning – learn the knowledge about kitchen organisation and the principles of menu planning. Understand the costing of dishes, and the elements of costs to be considered when calculating selling prices
• Health and hygiene standards - learn the main competencies needed for preparing and cooking food safely, focusing on the four main areas of control – cooking, cleaning, chilling and preventing cross-contamination, in addition to supplies being satisfactory
• Food service - develop the knowledge and understanding to apply the personal and professional skills required when serving food in the catering and hospitality industry.
You will also gain industry-required awards in:
• Level 2 Healthier foods and Special Diets
• VRQ Level 2 Food and Beverage Service -
Future Prospects
Progress to the Level 3 qualification. Or start work straightaway in a junior position across the sector from cafes to clubs and contract catering.
