Entry Criteria
To enrol on a Level 1 Diploma, applicants should demonstrate a positive attitude towards learning and a commitment to developing the fundamental skills required for their chosen area of study. Typically, applicants will have:
- Studied a GCSE programme or be able to demonstrate that they are working at or towards Level 1.
Applicants without formal qualifications may be invited to complete an initial assessment in English and maths to determine the most suitable level of study.

What will I study?
In the kitchen you’ll be trained to use a number of techniques on a wide range of food including:
• Baking, roasting and grilling – develop the skills and knowledge required to prepare and cook foods by the baking, roasting and grilling methods of cookery. Learn to follow dish specifications and begin to appreciate the aesthetic aspects of food preparation through the processes of finishing and presenting the products.
• Frying - develop the skills and knowledge required to prepare and cook foods by the deep frying and shallow frying methods of cookery.
• Boiling, poaching and steaming - develop the skills and knowledge required to prepare and cook foods using the boiling, poaching and steaming methods of cookery.
You will also gain industry-required awards in:
• Level 1 Food Safety, Health and Safety
• VRQ Level 1 Food and Beverage Service -
Future Prospects
Upon successful completion of this course, you will be able to progress to the Level 2 Diploma in Professional Cookery.
