Entry Criteria
Successful completion of Level 1 of Diploma in Professional Cookery or NVQ Level 1 Catering Certificate.
You will also be invited to a Course Introduction Meeting.

What will I study?
Get creative in the kitchen and build on your skills to make really great food.
Subject areas include:

Understand how to prepare and cook soups and sauces, fruit and vegetables, poultry, meat and offal

Working with and understanding how to cook fish and shellfish, rice, pasta, grains and egg dishes

Learn to prepare desserts, puddings and bakery products

Healthier food – develop knowledge and understanding of the importance of good health and the principles of a balanced diet and to apply best practice in the preparation, cooking and serving of dishes, to ensure that changes in nutritional value are minimised

Special diets – learn best practice in the preparation, cooking and serving of special diets and develop an awareness of the responsibility of food providers to inform customers of the content of products or dishes

Food safety – learn the main competencies needed for preparing and cooking food safely, focusing on the four main areas of control – cooking, cleaning, chilling and preventing cross-contamination, in addition to supplies being satisfactory.

Creating exciting menus – learn to prepare and cook taster menus, 3 course menus and 6 course menus with a variety of different flavours

There will be opportunities to improve your English and maths and take part in GAP work placements to develop the skills employers are looking for.

What can I do next?
Progress to the Level 3 Diploma in Advanced Professional Cookery or Diploma in Hospitality. Possible careers include commis chef or related jobs, plus opportunities across the food and beverage sector.
