Advance your skills and technical know-how on our Level 1 Diploma - Professional Chef. Develop your culinary skills alongside theoretical elements to lead you to part-time or full-time employment within the Hospitality & Catering Industry.

This course is run over a full day in College with classes including food safety, health and safety, nutrition, food theory and practical in our state-of-the-art kitchen. There will be some self-study to complete at home between classes.

  • Entry Criteria

    There are no formal entry requirements for this Level 1 course. However, you should be working at a level that enables you to successfully access and achieve the qualification. This may be demonstrated through English and/or maths qualifications, industry experience, or prior achievement at a similar or higher level.

    Applicants without formal qualifications will be invited to attend an assessment session to ensure they are working at an appropriate level. Where additional development is needed, our team will support learners to access suitable English and/or maths provision to build the core skills required for future progression onto a Level 1 qualification.

  • What will I study?

    On this course you will be trained to use a number of techniques on a wide variety of different ingredients.


    • Baking, roasting and grilling – develop the skills and knowledge required to prepare and cook foods by the baking, roasting and grilling methods of cookery for savoury and sweet dishes


    • Stewing and braising – learn in depth the way these two styles of cookery use lesser cuts of meat to make wholesome tasty dishes


    • Frying - develop the skills and knowledge required to prepare and cook foods by the deep frying, stir frying and shallow frying methods of cookery


    • Learn to follow dish specifications and begin to appreciate the aesthetic aspects of food preparation through the processes of finishing and presenting dishes


    • Boiling, poaching and steaming - develop the skills and knowledge required to prepare and cook foods using the boiling, poaching and steaming methods of cookery


    • Learn how to prepare a selection of cold foods such as salads, canapes and sandwiches

  • Future Prospects
