Our Food Academy students were visited by the chefs from Wembley Stadium, including the Head of Culinary, Harry Lomas, yesterday.

They were treated to two demonstrations and practical sessions where they received individual feedback on their dishes; along with a Masterclass in-between, in which the chefs gave an inspirational talk about life in the industry.

The morning session consisted of cooking pan roasted Sea Bass in a classic prawn bisque served with smoked mash, sea asparagus and baby cress. In the afternoon session the chefs cooked tender braised chicken, layered with saffron spiced long grain rice infused with hints of cardamom and rose water, garnished with fresh dhaniya crispy onions, served with a sweet but savoury mint raita to produce a delicious Chicken Biryani.
