The hospitality and catering industry is dynamic and rewarding, with a variety of jobs on offer. This prestigious course is for people aiming for the very best roles in a professional kitchen, developing the skills you’ll need to work as a professional chef across a range of kitchen departments, from pastry to sauces, and learn about supervisory techniques needed to run a top kitchen.

  • Entry Criteria

    Successful completion of Level 2 Diploma in Professional Cookery or equivalent, including GCSE grade 4 or above in English language and maths.

  • What will I study?

    You will have the opportunity to design your own signature dishes, and perfect your cooking skills in the kitchen by:


    • Preparing meat - develop the necessary advanced skills, knowledge and understanding of preparing and cooking meat to dish specification. The emphasis is on developing precision, speed and control in existing skills and developing more refined and advanced techniques, as well as knowledge of a wide range of cuts of meat


    • Preparing poultry and game - develop the necessary advanced skills, knowledge and understanding of preparing and cooking poultry and game to dish specifications. The emphasis is on developing precision, speed and control in existing skills and developing more refined and advanced techniques


    • Preparing fish and shellfish - develop the necessary advanced skills, knowledge and understanding of preparing and cooking fish and shellfish to dish specification. The emphasis is on developing precision, speed and control in existing skills and developing more refined and advanced techniques


    • Preparing sauces, purees and side dishes - develop the skills needed to prepare, cook and finish sauces, purees and side dishes to given requirements and specifications, using safe and hygienic working practices


    • Kitchen and larder practice and theory


    You will also gain industry awards in:


    • Supervisory skills
    • Level 3 Food Safety, Health and Safety


    Then put your skills to the test as head chef for a night in our professional training kitchens. You’ll be planning menus for inventive dishes, purchasing ingredients online, and preparing meals to paying customers in our restaurant.

  • Future Prospects

    Progress to a Foundation degree or Honours degree, or start work straight away as a senior commis chef in hotel, restaurant or contract catering kitchen.
