Successful completion of a relevant Level 1 programme.
You will also be invited to a Course Introduction Meeting.

What will I study?
You’ll be developing a whole range of skills across the kitchen including:

Preparing and cooking stocks, soups, sauces, fish, shellfish, meat, fruit and vegetables

Understand how to prepare and cook biscuit, cake and sponges such as, fruit cake, rock cakes, Victoria sandwich, shortbread and sponge biscuits

Catering operations, costs and menu planning – learn the knowledge about kitchen organisation and the principles of menu planning. Understand the costing of dishes, and the elements of costs to be considered when calculating selling prices

Health and hygiene standards - learn the main competencies needed for preparing and cooking food safely, focusing on the four main areas of control – cooking, cleaning, chilling and preventing cross-contamination, in addition to supplies being satisfactory

Food service - develop the knowledge and understanding to apply the personal and professional skills required when serving food in the catering and hospitality industry.
You will also gain industry-required awards in:

Level 2 Healthier foods and Special Diets

VRQ Level 2 Food and Beverage Service
There will be opportunities to improve your English and maths and take part in GAP work placements to develop the skills employers are looking for.

What can I do next?
Progress to the Level 3 qualification. Or start work straightaway in a junior position across the sector from cafes to clubs and contract catering.
