The course is broad and inclusive, designed to develop your understanding of all aspects of the culinary world and give you well-rounded experience in a fast paced, exciting industry.

Entry Criteria
This is a skill based course, where most students will traditionally need to start at level 1.
You will also be invited to a Course Introduction Meeting.

What will I study?
In the kitchen you’ll be trained to use a number of techniques on a wide range of food including:

Baking, roasting and grilling – develop the skills and knowledge required to prepare and cook foods by the baking, roasting and grilling methods of cookery. Learn to follow dish specifications and begin to appreciate the aesthetic aspects of food preparation through the processes of finishing and presenting the products.

Frying - develop the skills and knowledge required to prepare and cook foods by the deep frying and shallow frying methods of cookery.

Boiling, poaching and steaming - develop the skills and knowledge required to prepare and cook foods using the boiling, poaching and steaming methods of cookery.
There will be opportunities to improve your English and maths and take part in GAP work placements to develop the skills employers are looking for.

What can I do next?
Upon successful completion of this course, you will be able to progress to the Level 2 Diploma in Professional Cookery.
