Level 1 Diploma - Professional Chefs
Introduction
Advance your skills and technical know-how on our Level 1 Diploma - Professional Chef. Develop your culinary skills alongside theoretical elements to lead you to part-time or full-time employment within the Hospitality & Catering Industry.
This course is run over a full day in College with classes including food safety, health and safety, nutrition, food theory and practical in our state-of-the-art kitchen. There will be some self-study to complete at home between classes.

Entry Criteria
This is a skills-based course, where most students will traditionally need to start at Level 1
Our part-time provision is designed primarily for adult students, aged 19 and over. Students aged 16 to 18 may be allowed to enrol on the course at the discretion of the Head of Admissions and Head of School. If you have any queries please contact our admissions team on 01923 812345. -
What will I study?
On this course you will be trained to use a number of techniques on a wide variety of different ingredients.

Baking, roasting and grilling – develop the skills and knowledge required to prepare and cook foods by the baking, roasting and grilling methods of cookery for savoury and sweet dishes

Stewing and braising – learn in depth the way these two styles of cookery use lesser cuts of meat to make wholesome tasty dishes

Frying - develop the skills and knowledge required to prepare and cook foods by the deep frying, stir frying and shallow frying methods of cookery

Learn to follow dish specifications and begin to appreciate the aesthetic aspects of food preparation through the processes of finishing and presenting dishes

Boiling, poaching and steaming - develop the skills and knowledge required to prepare and cook foods using the boiling, poaching and steaming methods of cookery

Learn how to prepare a selection of cold foods such as salads, canapes and sandwiches
